Xavier, as head butler at the Metropole Hotel in Monaco received a 3 star review from the Michelin Guide CEO Jean Claude Naret
At a young age, Xavier quickly
developed a love for cooking and table service, having been brought up in a
family of chefs and restaurant owners in the south of France. His grandparents
immigrated to France from Florence, Italy in the 1930’s and taught him all they
knew about cooking. By the age of
15, Xavier began officially in hotel dining rooms.
In the beginning of the
1980’s, Xavier moved to the United states of America and begun working as a
manager in major restaurants in California for 25 years. It was here, he opened his own
restaurant where he won awards for best restaurant two years in a row.
Before leaving the US to
settle back in the south of France near his family, Xavier worked as chef de
cuisine in a private home in San Francisco . With a desire to further develop his service career, he
studied butling in Holland. He has
since served Head of States and Dignitaries in Monaco’s well-known restaurants and hotels, worked in estates and on yachts as a butler.
Xavier’s goal is to teach
the younger generation that good service and positive behavior is
a value added skill for both private and professional areas of life.
